Overview
The Inventory Manager is mainly responsible for inventory management through careful analysis of all facets of restaurant operations. The Inventory Manager plays an integral part in achieving budgeted profitability to ensure the restaurant meets its targets. It is critical that all roles and responsibilities be undertaken with care to ensure an uncompromised guest experience that is synonymous with Milos standards.
Primary Roles & Responsibilities
In coordination with senior level management and BOH staff, establish, implement, and maintain procedures to ensure accuracy in recording purchases and inventory in the IMS System
Through coordination with the Executive Chef and General Manager, maintain awareness of menu items and recipes in Milos IMS system to ensure accurate inventory depletion and efficient identification of waste
Process cost and inter-store transfers of inventoried products in the Milos IMS system
Implement and maintain current standard operating procedures for storage, inventory & receiving
Track variances in inventory counts and address irregularities through analysis
Track product cost trends and report any notable increases to Finance and Operations teams
Analyze menu pricing to prepare variance analyses, communicate recommended adjustments with the intent of controlling costs
Analyze and identify waste in all areas of the business operation, communicate recommendations to Finance and Operations teams
In collaboration with the Controller, oversee all variable and fixed costs to ensure budgets are respected and any variance is communicated
Requirements
A minimum of 3 years’ experience in a similar role
Experience with large-scale restaurant purchasing and recipe costing, invoice review, inventory management and analysis
Excellent Microsoft Office and Excel knowledge
